Biography

Albano was raised in Springfield, Massachusetts, and attended Longmeadow High School. After working various food service jobs, he changed majors from engineering to culinary arts at Holyoke Community College. Upon completion he worked the local restaurant scene.

His career goals took a different turn after starting work at Madeleine’s Restaurant in Windsor, Connecticut. He worked with chef Warren Leigh, who was trained in Europe and by French Chef trainer Madeleine Kamman. Albano was able to work through the ranks of Leigh’s four restaurant group that included fine dining French, New American, Upscale Seafood, and a Wood Fired Brick Oven Bistro.

With a new appreciation for classical cooking and desire to test the waters of other cuisines, he began pushing the culinary envelope in his area, commanding the chef brigades at award winning restaurants Carmelina’s, La Cucina di Pinocchio and Café Manhattan. Albano was then recruited to help develop a new Asian-Tapas concept called Fusion Café.

As the trend of tapas started to explode and interest for passionate creative chefs were now in demand, Albano found job offers coming from outside his native area of Massachusetts. He was a Personal Chef at the Rockin K Ranch in Montana, Contract Chef for Craig and Sallys Restaurant in St Thomas, and was hired to design a concept and open Seven Restaurant in Whistler, British Columbia home of the 2010 Olympics.
