Cotswold is a variation of Double
Gloucester cheese to which chives have been added. The chives add a savory and
pungent flavor to the creamy cheese. Cotswold pairs well with
beer, and is thus considered a
"pub cheese". It also melts well, similarly to cheddar, and is often served melted
on slices of bread. It was
invented at Long Clawson Dairy and there is only one true Cotswold.
The products labeled Double Gloucester with onions and chives are
imitations of Cotswold.
